This is an expressive Sauvignon Blanc with a light-straw colour. On both the nose and palate is expressive notes of green melon, lemon grass and hints of gooseberries. The integrated natural acidity creates a balance, sculpting the palate with a pleasant mouth filling texture.
The grapes were from two beautiful sites in Darling. The one offered concentrated fruit from bush vines versus the other block, a manicured 5-6 wire VSP-trellising. The different clones, sites, soil types and elevation, allowed us in the cellar to work with unique characteristics that is true to the Darling region.
The grapes were handpicked in bins during cool, early mornings. We used a combination of overnight skin contact versus 3 hours on the skins for optimum fruit extraction, but still obtaining the natural acidity. Lower juice recovery was obtained during the pressing cycle for extracting only the finest essence of the grape. After the juice settled clear for two days, we inoculated the juice with a selected yeast strain. Fermentation occurred in stainless steel tanks at 12-15°C. After fermentation, the wine was kept on the lees as long as possible and with regular lees stirring to enhance the mouthfeel.
