TASTING NOTES

An expressive Sauvignon Blanc with a light-straw colour. Pungent notes of lemongrass, green melon, and hints of kiwi, compliment the refreshing acidity, which tightly knit these fruit layers together. A remarkable expression of this unique terroir.

 

VINEYARDS

The grapes are from the most beautiful farm in Darling, with pristine manicured dry land vineyards that will make any grape grower jealous. Like soldiers at Buckingham palace each row is standing up straight with the shoots neatly tucked to their sides. The cool sea breeze in the afternoon exuberates energy in the vineyard. The bunches were compact, and the berries filled with joyful Sauvignon Blanc flavours.  

 

WINEMAKING

Three blocks from this immaculate farm were monitored and tasted weekly prior to harvesting. Each block was picked at a ripeness level where we found the fruit aromatics were best expressed. During fermentation these three parcels expressed aromatics, that reminded me so much of the 2020 vintage. The wine of each block was kept separate and after meticulous tasting, two of the three blocks were selected for The Pledge Our Darling Sauvignon Blanc 2021.
