The Pledge Organic Planet White 2021

TASTING NOTES

Be invited by a delightful bouquet of floral aromas, mingling with the essence of citrus blossom, honeydew, and hints of nuts. A fusion of white pear, peaches and lemon adds a touch of fruitiness. The palate is embraced by mineral notes, leading to a finish accented by subtle quince.

VINEYARDS

The grapes used for this white blend originate from South-facing sloped vineyards located in the Swartland. ¬The warm climate of the Swartland is tempered by the influence of the cool sea breeze from the nearby Atlantic Ocean, which makes for an ideal long, even ripening period. These conditions are ideal for harvesting at a ripeness stage where the grapes are expressive in flavour and consist of optimum sugar levels, while still offering good natural acidity.

WINEMAKING

The grapes were meticulously sorted upon arrival at the cellar to remove any green or inferior berries and ensure that only the most pristine fruit is vinified. Fermentation of the three varietal components took place separately at 16°C (all three, respectively, inoculated with non-Saccharomyces yeast): the Verdelho partially in stainless steel and 500L older French oak barrels; the Roussanne in older 500L barrels; and the Chenin Blanc in 300L barrels - combination of first and second fill. The barrel component spent 12 months in French oak.
