TASTING NOTES


Aromas of crisp green apples and fresh asparagus greet the senses, followed by a lively palate of kiwi, nectarine, mango, and citrus. The zesty fruit flavours are complemented by subtle hints of ginger and fennel in the background. An underlying layer of marzipan and vanilla oak adds depth to the overall experience.


VINEYARDS


The Chenin blanc grapes are from an older vineyard, planted in 1992. The vineyards are planted in Table Mountain sandstone soils, with a 7 - 8 tons per hectare yield. Vines are planted in an East/West row direction. Optimum ripeness is of the utmost importance to reflect the true beauty of this versatile grape variety. Picking at + 22°B.


WINEMAKING


All the grapes are handpicked. A percentage of grapes are kept overnight on skins, to create a fuller richer style that gets blended with a fresher Chenin Blanc component. This allows a balance of Chenin Blanc textures. After two days of settling, the juice is fermented in stainless steel tanks at about 15-17°C, with specially selected yeast strains. Halfway through fermentation good quality French Oak staves are added. Regular lees stirring adds to the mouthfeel. 7 months spend on top quality French Oak staves.
